Canon refers to information recognized as part of official lore.
When referring to strictly the Star Trek franchise, canon refers to information that is derived directly from onscreen evidence from the Star Trek television series and movies only. Other sources including licensed products such as video games, novels, comics, etc. are considered non-canon in this sense. Furthermore, fan-created content would be considered non-canon and is sometimes refered to as "fanon."
Usage in UFOP: SB118
Because all sims written by members in UFOP: StarBase 118 are technically fan-created content, usage of the canon/non-canon terminology is not as useful since judged strictly by the above definitions, all of UFOP: StarBase 118 is non-canon or fanon.
